Q&As with Chef Rudy Sta Ana
Free Range Kings (FRK): Tell us about your background. Where are you from and what specific events got you to where you are at today?
Chef Rudy Sta Ana (Chef Rudy): Well my name is Rudy, aka Chef Flip Fantabulas, and I always loved food and had an interest in cooking from a young age. I am a Filipino-American, born in Bellflower, California but raised in Long Beach. Although I am not your traditional chef because I never been through any professional training, I did work at two restaurants: Thai Lotus in Corona and Manila West located in West Covina.
I can say that a lot of my influence and interest has come from this cannabis cooking show called Bong Appetit. The very first cannabis event I attended and prepared food for was Kushstock! The events that got me to where I am? Hmmm, well for sure cooking for Blunt Talks has helped, and then I believe producing Bites events hosted by Cannabis Catered Events really put me on the map in 2018. We finished that year off strong collaborating with Chef Jen to host the “Canna Christmas Appreciation Feastival,” a special invite-only 420 friendly event in Downtown Los Angeles.
But the event that really got people talking about us, I gotta say would be “High Seas,” our CBD Comedy Dinner on a yacht.
FRK: What cuisine or cuisines do you specialize in?
Chef Rudy: The answer to that would be Filipino and Thai food, but I also cook a variety of different cuisines. I don’t really like to limit myself.
FRK: How did you get into the cannabis cooking game?
Chef Rudy: By watching a whole lot of Bong Appetit episodes!
FRK: What do you think is your competitive edge over other cooks that specialize in a similar cuisine and in cannabis-infused dishes? What makes you different?
Chef Rudy: Well, most chefs have culinary training, or as I like to say, “cookie-cutter chefs.” They usually cook and think alike. I believe my unorthodox approach sets me apart.
FRK: What is your go-to cannabis-infused dish to cook?
Chef Rudy: I would have to say “Elote Pizza!”
FRK: What are your favorite appliances/tools and cannabis products to use for infused dishes?
Chef Rudy: Magical formally known as Magical Butter.
FRK: Do you have any rules around THC or CBD dosage, or is that based on the client’s preference?
Chef Rudy: Microdosing!!!! And always keep some CBD around to counter the effects of too much THC.
FRK: Any advice for folks that want to try to make meals using cannabis at home?
Chef Rudy: Always make sure to decarb your flower first!
FRK: You have been catering in LA for a few years now. Describe a couple of memorable clients and/or events you’ve catered.
Chef Rudy: Cooking for musician Miguel in his studio probably tops my list, but meeting Abdullah Saeed and Ry Prichard from Bong Appetit is definitely a close second.
FRK: What adjustments have you made in your business and your personal life during the COVID-19 pandemic?
Chef Rudy: As far as COVID-19 goes, we all are going through it, so we will only get through this together! I have been taking this time to mourn my Papa Jim’s passing and just spending time with my immediate family.
FRK: Do you have a favorite dispensary and cannabis strain/product?
Chef Rudy: Well, since I am from the “IE” (Inland Empire), and I did their grand opening, I would have to say Medcare Farms in Lake Elsinore. And I am a big sativa/hybrid guy!
FRK: What’s your go-to meal and restaurant when you get the munchies?
Chef Rudy: Mom and pop Korean BBQ spots.
FRK: What are your other passions outside of cooking?
Chef Rudy: I am a big Sneakerhead. It is all about the hunt for some dope ass kicks and my love for basketball. I spend a lot of my personal time playing poker at my buddy Glenn’s house and like to make it down to the shooting range on occasion.
FRK: What is next for Chef Rudy? Any big plans or goals?
Chef Rudy: Social distancing and just praying we all get through this COVID-19 together!
